Restaurant: Jacques Cafe
Jacques Pauvert has more than 20 years of experience as a professional chef, manager and restaurant owner, creating innovative regional menus and dining experiences.
Born and raised in France, Jacques spent his childhood living and working on his family’s vineyards until he enlisted into the French military service. After completing a tour stationed in the east African Reunion Islands and in Madagascar, the self-taught chef began an international restaurant career that includes fine dining eateries along the French Riviera; in Los Angeles, California; and on the Hawaiian islands. After working at the Ritz Carlton Kapalua, Jacques managed restaurants including Hali’imaile General Store, Joe’s Bar & Grill and Gannon’s Pacific View in Wailea, Maui. He also owned and operated Jacques Northshore Bistro, a successful neighborhood eatery in Paia, Maui.
An avid adventurer, Jacques also spent his time in Hawaii building and testing wind-powered water craft. He is a superb wind surfer, kiteboarder and stand-up paddle board competitor, and was sponsored by internationally recognized windsurfing champion Robby Naish.
In 2013 a business opportunity brought Jacques to the U.S. mainland, where he made a new home in Las Vegas, Nevada, and opened Jacques Café, a casual American bistro in the upscale master-planned community Summerlin.
An accomplished world traveler, chef and restauranteur, Jacques now brings his wide-range of experiences and talent to his latest venture. Jacques Café is a new restaurant concept offering budget-friendly, fresh and healthy meals in a casual breakfast, fast-casual lunch and cozy dinner setting. Jacques incorporates hearty dishes, such as beef short ribs, grilled salmon and roasted Cornish game hen to his menu while also including health conscious savory and sweet options, including many gluten-free and vegetarian items. Complimenting main courses are a variety of confections and pastries created by Jacques and baked fresh throughout the day. With Jacques Café, Jacques has created a fast casual, yet healthy, quality dining experience in the heart of Summerlin.
